Great pan! But is huge!
So this pan measures 10” at the base, but 12” at the top! If I had realized the implications of this, I would have gone for a smaller dish.It baked up perfectly and cleaned up well! I even had a lot of baked on sugar that released so well.I used a typical pie dough recipe in terms of portion and had to stretch it very thin to reach the whole pan. So I would say to do 1.5x your recipe so your dough isn’t so thin in the end. It baked up super well and crispy, I was really pleased with the bake quality.

So this pan measures 10” at the base, but 12” at the top! If I had realized the implications of this, I would have gone for a smaller dish.
It baked up perfectly and cleaned up well! I even had a lot of baked on sugar that released so well.

I used a typical pie dough recipe in terms of portion and had to stretch it very thin to reach the whole pan. So I would say to do 1.5x your recipe so your dough isn’t so thin in the end. It baked up super well and crispy, I was really pleased with the bake quality.
